Request to BM Kocher – “Prepare the catering industry well for the future”
A vegetarian-vegan cooking apprenticeship puts the industry in a better position for the future: It creates opportunities for companies looking for skilled workers and for the growing number of young people who do not want to handle meat during their cooking apprenticeship.

Vienna (OTS) – On the occasion of the presentation of the Wedl Food Report 2024, the Green Economy is calling on BM Martin Kocher to prescribe vegetarian-vegan cooking theory. “The nutritional trends and the desire for more variety on the menus are once again becoming clear. With his decision, the Federal Minister must ensure that the catering establishments can prepare themselves well for these developments,” emphasizes Sabine Jungwirth, federal spokeswoman for the Green Economy.
The representative survey by the Wedl Food Report shows: People who eat a vegetarian or vegan diet are dissatisfied with the food on offer in restaurants. There is also a rapidly growing number of flexitarians who want more variety and meat-free options on their menus.
“The trend is clear – and matches the results of the study carried out by the Gastronomy Association in autumn 2023,” says Jungwirth. “A vegetarian-vegan cooking apprenticeship puts the industry in a better position for the future: It creates opportunities for companies looking for skilled workers and for the growing number of young people who do not want to handle meat during their cooking apprenticeship.
The Federal Minister should no longer hesitate and hesitate, but should open up these opportunities for Austrian gastronomy.”
