Vienna (OTS) – From “Stuffat tal Fenek” to “Maltese-style stuffed squid tubes” to “Bragioli – Maltese beef roulades”:
“Silvia cooks” from Monday, April 8th to Friday, April 12th, 2024, at 2 p.m. on ORF 2 in new episodes with the crème de la crème of the cooking scene. This week, none other than Johann Lafer is in the TV kitchen with the presenter: from Monday to Thursday, the award-winning top chef is at Silvia Schneider’s stove and shows two Maltese dishes each. The Styrian native began his training in Graz in the 1970s. This was followed by stations in Berlin and Hamburg. In 1980, as head pastry chef in the “Schweizer Stuben” hotel restaurant, he was voted “Best Pastry Chef in Germany”. In the years that followed, Johann Lafer worked in Eckart Witzigmann’s “Aubergine” restaurant in Munich and in Paris at “Gaston Lenôtre”. In 1987 he passed the best master chef examination in Rhineland-Palatinate with summa cum laude and a second star in the “Guide Michelin” and 18 points in the “Gault Millau” followed. Together with his wife, he opened the Relais & Châteaux hotel “Lafers Stromburg” with the restaurant “Le Val d’Or” and the inn “Turmstube”. He has received numerous awards such as the Gold Medal of Honor of the State of Styria, the Silver Medal of Honor for services to the Republic of Austria and the title “Austrian Ambassador of Enjoyment”. He is also the author of many cookbooks. At the end of the week, Silvia Schneider is traveling to Malta, where “widow’s soup” and a traditional rabbit stew are served.
The recipes of the week at a glance:

On Friday, April 12th, “Silvia is on the road” – this time she is traveling to Malta, an archipelago of seven islands and also the smallest state in the European Union. At the start of the trip, Ryan Muscat invites Silvia to play Boċċi, a traditional Maltese sport with its own rules that are only played here. The next morning we will visit a handicraft shop. Gaetano is a true artist of silversmithing and, in his small workshop in Marsascala, continues the craft that the Hospitallers brought to the island hundreds of years ago. Silvia goes to Saint Juliens for lunch. Overlooking the waves of Baluta Bay, chef Matthew Bonsfield invites you to cook. There is “widow’s soup” and rabbit stew. Strengthened, we continue to the so-called “Three Cities”. Birgu, L-Isla and Bormla – the cities are best explored on a traditional Maltese boat, called a dghajsa. The next stop is Fort St. Angelo, an important defense point in numerous naval battles. Isabelle Sant is a travel guide to Malta and a passionate historian; she knows the history of the island state like no other. Malta was shaped primarily by the arrival of the Knights of the Order of St. John in 1530. At the end of an eventful day, we go on a stroll through the colorful nightlife of Valletta.
