St. Pölten (OTS) – Enjoy Lower Austria. The best way to do this is on a culinary journey of discovery through the country’s regions. Because Lower Austria has many culinary treasures to offer. From the hops in the Waldviertel, which gives the beer its aroma, or the slightly sour Schofkas in the Mostviertel, which in its form as a roll is only available in the Mostviertel in Austria, to the pumpkin, which is now at home in the Weinviertel cuisine. The film from the series “Austria Experience” from the ORF regional studio Lower Austria is dedicated to these culinary specialties of Lower Austria (design: Birgit Brunner, camera: Philipp Wied) and is intended to whet the appetite for the taste of the regions. Typical dishes such as pheasant breast wrapped in bacon or cider foam soup with sheep’s cheese pockets are served.
It is the climate, the love for the product or the tradition that contribute to the fact that typical culinary treasures can be found in the regions of Lower Austria. In the thermal region, for example, Zierfandler and Rotgipfler are true rarities in Austria. These types of white wine only find the perfect climate around Gumpoldskirchen. Not only wine, but also apricots play a major role in the Wachau. Only through the quick processing of the very ripe, sweet apricots is apricot jam created that tastes just like grandma used to make. Carp farming has a long tradition in the Waldviertel – the ponds here are drained and fished in October. But the carp are also taken out of the pond in summer. The fish are allowed to grow slowly and therefore taste particularly good. And so carp dishes are now on the menu in the Waldviertel all year round, such as carp fillet in beer broth with root vegetables.
The film from the ORF Lower Austria regional studio not only shows how hops and pumpkins are harvested on its culinary journey, but also visits inns in Lower Austria that conjure up typical dishes from regional specialties and sometimes bring back childhood memories.
