The newly launched culinary experience series “Waldviertler TischKultur” had its premiere on September 3rd in the Waldschenke Schreiber in Kurzschwarza. The Waldviertel chef Doris Schreiber and the two chefs Alexander Thaler and René Zimmermann have conjured up a gourmet dinner from the pure essence of the Waldviertel. True to the motto: brutally local and firmly rooted.

The Waldviertler TischKultur combines culinary classics at toque level, topped with modern facets of art and culture, rounded off by traditional Waldviertler craftsmanship. We were invited to dinner where deep roots and natural tranquility have their origins: in the open air, surrounded by trees and forests, on the edge of the forest, in Doris Schreiber’s Johannisgartl. She set the tables with natural elements, thereby establishing a connection to the uniquely regional and deeply rooted cuisine of the three protagonists. Feel good and enjoy in a natural setting – that is the motto of this new series of events, which was jointly launched by the local actors in the Waldviertel in order to uphold the tradition and pass it on in a lovingly reinterpreted way.

The three chefs served exclusive dishes from Waldviertel classics such as Carp and potatoeswhich – characterized by the sophistication of the award-winning chefs – seduced you into other spheres: carp mousse with carp caviar and critters, raw marinated organic beef with potato foam, Jerusalem artichoke cream soup with carp calamari, Waldviertler Surf & Turf – venison steak with baked carp milk and potatoes -Herb roulade, spicy petit four made from Waldviertel cheese and, as a sweet finish, gray poppy seed mousse with creeper and lavender.

The natural talents

Doris Schreiber is a proud holder of the “Karpfenmütze”, a recognition for catering establishments that have made a special contribution to the preparation of Waldviertler carp. René Zimmermann is a cook, alchemist and free spirit. On his over 100-year-old farm in the Waldviertel, he tries to implement his philosophy of how to regenerate the body and the environment in an enjoyable way. Alexander Thaler In addition to traditional tavern cuisine, he also creates creative fine dining concepts in his own inn. Slipped into the role of the Waldviertel sommelier Wolfgang Schwarz from the Ursin Haus in Langenlois. He filled the glasses with sparkling wine and wine from winemakers in the Kamptal, or with specially brewed Schremser Waldbier. As an intermediate course, a unique Wipferl Djin was served and there were various whiskeys from the Waldviertel to taste.

The crowning highlight of this evening were the light installations Leo Bettinelli. The Argentinian native who lives in the Waldviertel region loves using light installations to let the spirits of the forest dance between rocks, moss and trees. He created a mystical atmosphere that suited this evening particularly well – a symbiosis of nature, art and cuisine. The light spectacle was musically accompanied by the impressive hand-pan sounds of Johannes J. Kronegger.

Not only were the food and drinks regional that evening, but also many of the utensils used. On the tables there were embroidered fabric napkins, specially engraved glasses and carafes, branded bottle openers and high-quality tea and guest towels – all handmade by Waldviertler quality companies. Also brutally local!

The experience continues

This successful first event, which sold out immediately, laid the foundation for a promising series that has a few more highlights in store. The next event will take place on November 6th at Foggy Mix in Waidhofen an der Thaya instead of. This evening provides culinary highlights – of course brutally local and firmly rooted Bernhard Zimmerl, Award-winning chef in Foggy Mix and Matthias Ambrozy, Owner and passionate chef of the Ambrozy restaurant in Nondorf. 2. Waldviertler TischKultur in FOGGY MIX

The next event from the new Waldviertel TischKultur experience series will take place on November 6th at Foggy Mix in Waidhofen an der Thaya. Culinary highlights – of course brutally local and firmly rooted – will be provided this evening by Bernhard Zimmerl, award-winning chef at Foggy Mix, and Matthias Ambrozy, owner and passionate chef at the Ambrozy restaurant in Nondorf.
